Okay, so I’ve been wanting to build a pizza oven for, like, forever. Seriously, who doesn’t love amazing, wood-fired pizza? I finally decided to take the plunge and get one of those brick pizza oven kits. Here’s how it went down.
Picking the Right Kit
First things first, I had to find a kit. I spent hours looking online. There are so many options! Some are just the dome, others include the base, and they come in all different sizes. It was a little overwhelming, to be honest. I ended up going with a medium-sized one that included the dome and a basic stand. I figured I could customize the stand later if I wanted to.


Getting Everything Ready
Once the kit arrived (which was a whole adventure in itself – that thing was HEAVY!), I had to prep the area. I cleared out a spot in my backyard, making sure it was level and away from anything that could catch fire. Safety first, people!
Building the Base
The base of my oven looked simple and easy, I leveled the ground and made sure, my base was stable to be able to carry my oven, then I used bricks and mortar to build up the base to the right height. It took a little while to get it all nice and even, but it was pretty straightforward.
Assembling the Dome
This was the fun part! The kit came with these pre-cast refractory bricks that fit together like a puzzle. It was actually kind of cool to see it take shape.
- I started by laying out the first layer of bricks, dry-fitting them to make sure everything lined up.
- Then, I used refractory mortar (which came with the kit, thankfully) to stick them together. It’s like regular mortar, but it can handle super high temperatures.
- Layer by layer, the dome started to rise. It was a bit like building with LEGOs, but way heavier and more rewarding.
I took it one brick at time. It wasn’t too bad, but I definitely needed a buddy to help me lift some of the heavier pieces. Teamwork makes the dream work, right?
Curing the Oven
Once the dome was built, I had to let it cure. This is super important because you don’t want to fire it up to full heat right away. It needs time to dry out slowly.


- I followed the instructions that came with the kit.
- light small fires, gradually increasing the size and temperature over several days.
It felt like forever, but I didn’t want to risk cracking the whole thing after all that work.
First Pizza!
Finally, the moment of truth! After the curing process was complete, I fired up the oven to make my first pizza. It took a while to get the hang of managing the fire and getting the temperature just right, but man, that first pizza was incredible. Crispy crust, perfectly melted cheese, and that smoky wood-fired flavor… it was totally worth all the effort!
Lessons Learned
Building a brick pizza oven from a kit was a challenging but seriously rewarding project.
- Patience is key: Don’t rush the process, especially the curing.
- Get help: Some of those bricks are heavy!
- Read the instructions: Seriously, even if you’re a DIY pro, follow the instructions that come with the kit.
